What seitan is
Seitan is a high-protein meat substitute made from wheat gluten. Wheat flour is mixed with water into a dough and washed until most of the starch rinses away, or it is made directly from vital wheat gluten powder, then simmered or steamed and seasoned. It is used in vegetarian and vegan dishes as a stand-in for chicken, beef or deli slices, and it appears in many plant-based ready meals and restaurant dishes, sometimes called wheat meat or wheat protein.
Why it is Avoid for celiac disease
Seitan is close to pure gluten, which is why our rating is Avoid for celiac disease in every phase. The National Institute of Diabetes and Digestive and Kidney Diseases says the treatment for celiac disease is a gluten-free diet that people need to follow for life, and that wheat, barley and rye and the ingredients made from them are the sources to avoid. Unlike a product that might carry traces of gluten, seitan is made from it, so there is no safe amount for someone with celiac disease.
Why the rating differs for other conditions
For inflammatory bowel disease and Hashimoto's thyroiditis our rating is Limit during a flare and Usually OK in remission. Some people with these conditions report feeling better limiting gluten during a flare, the evidence is mixed, and celiac disease is more common in people with autoimmune thyroid disease, so screening is a question for your clinician. For Graves' disease, rheumatoid arthritis, multiple sclerosis and lupus the rating is Usually OK. NIDDK says researchers have not found that specific foods cause or worsen Crohn's disease symptoms, so a food diary is the most reliable way to judge your own tolerance.
Reading a label
Seitan may be labelled seitan, wheat gluten, vital wheat gluten, wheat protein or textured wheat protein. Plant-based burgers, sausages, nuggets and deli slices often use it, and so do some dishes in vegetarian restaurants, where it can be described simply as mock meat. Wheat must be declared as an allergen on US labels, so look for the allergen statement as well as the ingredient list. If you need to avoid gluten, tofu, tempeh and legumes are protein alternatives, and a food with a gluten-free claim has met the FDA's limit of less than 20 parts per million.
In short
In short, seitan is made from wheat gluten, so it is Avoid for celiac disease, Limit in a flare of IBD or Hashimoto's, and Usually OK otherwise.
